Maida | 500 grams |
Lily fat | 300 grams |
Marvo fat | 20 grams |
Salt | 10 grams |
Ice cold water | 275 ml |
Sugar | 1 tea spoon |
Method:
1. Sieve the maida using Flour shifter.
2. Cream fat and divide into 3 portion and keep aside.
3. Dissolve salt and sugar in water.
4. Make dough with maida and salt and sugar water.
5. Knead in 20 grams fat to make smooth dough using the spiral mixer
6. Rest the dough under wet cloth for 20 minutes.
7. Roll the dough into a thin rectangular sheet of 1/4 thickness using the Automatic sheeter
8. Apply one portion of the fat on rolled dough and fold in to book shape. keep for the rest 20 mins and repeat the procedure for other portion of fat.
9. Finally roll into square shape cut into 3" width and 4"length. fill the stuffing, fold it, place on a baking tray, sprinkle water on top of the puff using the Khari machine
10. Bake at 220c for 15-20 minutes, cool and again re-bake at 110c for 10 minutes for more crispier puff using the Rotary Rack oven
